Banana Soft Serve For Breakfast?

Absolutely.

I think it's only fitting that my first recipe that I share with you be the easiest recipe I've ever known. So here we have... BANANA "SOFT SERVE"!! yum yum yum.

The best part?
It only requires 1 ingredient. All you need for this delicious soft serve is 2 frozen bananas. (I only used 1 banana this morning, but that's only because I only had 1 banana frozen and this soft serve was calling my name!)

Ingredients:
2-3 frozen bananas

1.) Break up each banana into three parts and put all of the bananas in a food processor.
2.) Turn the food processor on, and process the bananas for 5 minutes, stopping the processor every couple of minutes to scrape the bananas off of the sides with a spatula.
3.) Put your "soft serve" in a bowl.
4.) Grab a spoon.
5.) ENJOY :)

Apple Jack Crack

I honestly cannot control myself around cereal.
Let me explain.

Whenever I start logging more running miles, I tend to crave sweets and carbs at nighttime. So when I saw a commercial for Apple Jacks last night I NEEDED to have them. I didn't hop in the car and go get them (thankfully I have enough self-control left to not run Forrest Gump style to the nearest grocery store), but when my mom asked me if there was anything she could pick up for me at the store today, I jumped at the opportunity to ask for my kiddy craving.

I basically ripped the box from her hands as soon as she walked in the door, and went on to consume my body weight in Apple Jacks. For about an hour, I was feeling like my 5-year-old ADHD wild-child self again. Two hours later, I'm feeling the full-on sluggish after effects of my sugar-fueled energy craze :(

Do you have a specific type of food that you crave after a long run?

Back To Reality

It's back to reality for this girl after a long weekend in Montana!

I'm going to apologize in advance for the bad quality of these pictures, I had to use my phone's camera since my camera is being repaired. They didn't turn out too bad!

On Thursday, I flew out west with my mom and dad to go see my "baby" brother's high school graduation!
So proud of Matt :) Congrats buddy!

Thursday was a LONG day of travel, and we started our day off at 4:30 a.m. when my dad picked up my mom and I to drive us to the airport!

Our first flight departed from the Madison airport at 6:00 a.m, and we touched down in Chicago about 45 minutes later. From Chicago, we flew to Seattle, which was a four hour flight that seemed like it went on forever, but the view from the window seat was incredible!

Yes, we flew on a tiny plane, complete with propellers.
Did I mention Matt lives in the middle of nowhere?

We stopped and had sushi at the Panda Express in the Seattle airport, which was surprisingly good! I'll admit that I was a little iffy about it at first, but my entire family was pleasantly suprised!

After lunch, we headed to the terminal for our next flight, which was from Seattle to Spokane, Washington. Spokane is the nearest airport to where Matt lives in Montana, and after we landed in Spokane we still had a 3-hour drive until we reached our final destination, Trout Creek, Montana! Yikes!

It was worth it! Trout Creek is literally in the middle of nowhere and it is beautiful.

As you can probably guess, there's not a whole lot to do in Trout Creek.. haha! However, we did our fair share of sightseeing and overall had an amazing trip!

I even got to go on a couple of runs in the mornings when my parents had things arranged to do with my brother! I can honestly say that I have never been on a more beautiful run in my entire life! The scenery is absolutely breathtaking, and running alongside the mountains was very distracting. Before I knew it I had logged 5 miles!!

I even managed to stop and take a couple of pictures on my phone for you all :)

I started off on the road that my brother lives on, and headed for the mountains!

Once I got there, I ran along side the lake for a while :)
The lake is really high this year, so the water turned a weird green color.

I snapped this one while running back to the house, haha!

Needless to say, the treadmill seemed a little boring this morning! But after a long weekend of eating massive amounts of grad party food and missing the gym, I was ready for a good run! I guess I was just spoiled this weekend :)

I ended up cranking out a pretty good workout! I started out with a 3 mile run on the treadmill, my designated daily workout for my training plan.. (I will put a link here with more info about my half-marathon training plan shortly!)

After I finished my run, I was still feeling really energetic, so I went to one of my go-to workouts from my favorite fitness blogger, Julie at Peanut Butter Fingers. Julie's blog is one of the first fitness blogs that I really got into, and it is my go-to daily blog. I am completely addicted!!

The workout that I chose is Julie's 20 Minute Treadmill Blast

Julie's version looks like this:

I adapted it to make it a little bit easier, since I had just run. I kept all of the 4.5 mph walking intervals the same, but instead of starting the running intervals at 8 mph, I started at 7 mph and still increased them by .5, with the fastest running interval being at 8.5 mph.

The end of this workout is a killer!! You really have to work to walk at 4.5 at a pretty intense incline! Plus, you're done in 20 minutes flat. Could it get any better than this? I LOVE THIS WORKOUT. Enough said.

I was planning on doing weights after my cardio, but the weights circuit was pretty packed today, so I decided to stick to cardio only today.

Now that I'm done, I'm starving! So it's off to make lunch :) I'll let you know all about it later!

My First Post!

During the last year I've fallen in love with fitness blogs. They're so addicting! So as a result, I have been thinking about making one of my own for a while now. Now that summer's finally here, I couldn't think of a better time to start!

Sooo... welcome to fitHAPPYness!

I created this blog to share stories of my day-to-day life, focusing on fitness and living an active lifestyle. In this blog you will find my workouts, recipes (some of my favorites, as well as some of my own), and every day information about my quest to live the healthiest life possible.

I am not a registered dietitian, cook or even fitness professional.. just a girl with a passion for healthy living :)
